Why don't taxonomists consider blacks, Asians, and whites as different species?

When different species of frogs could easily mate and produce fertile offspring who can also mate with each other, over indefinite generations, but do not simply because of the frequency of their mating calls which ensures they do not interbreed. Why couldn't they be considered separate races of the same species instead of different species? The rationale taxonomists use is because "they generally don't interbreed" much like how blacks, Asians, and whites rarely interbreed as well? What is with lack of inconsistency? That is just one of the many examples of animals that can interbreed to produce fertile offspring, but generally don't and are thus classed as different species.
